An enzymatic chemical process comprising the steps of providing a biphasic liquid
medium that includes one polar phase and one nonpolar phase in contact with each
other, wherein at least one of the phases includes reactants, and adding a polymer-protein
surfactant to the biphasic liquid medium, whereby the polymer-protein surfactant
will self-assemble at the interface between the polar and nonpolar phases and catalyze
reactions involving the reactants.
