Method of preparing a non-hygroscopic pulverulent composition, includes a step for the spray drying, without an atomization support, of an aqueous solution containing at least one initially hygroscopic product, having a glass transition temperature ranging from 10.degree. C. to 110.degree. C., and a cryogenic fluid, especially a food-grade cryogenic fluid, or a mixture of cryogenic fluids, particularly chosen from liquid air, nitrogen and carbon dioxide, the aqueous solution being obtained by dissolving the cryogenic fluid in an initial aqueous solution containing the initially hygroscopic product.
