An oil-resistant sheet material which has low resistance to gas permeation and excellent oil resistance and is suitable especially for use as a packaging material for foods containing an edible oil. The oil-resistant sheet material is obtained by forming at least one coating layer from a material comprising a hydrophobized starch and a crosslinking agent on at least one side of a base in an amount of 0.5 to 20 g/m.sup.2. By incorporating a fatty acid and/or polyvinyl alcohol into this coating layer, oil resistance is improved. A coating layer comprising a fatty acid as the main component or a coating layer comprising polyvinyl alcohol as the main component may be formed on that coating layer. Thus, a coating layer composed of at least two layers may be formed.
