Disclosed are a deterioration preventive agent for milk-containing foods
containing as its active ingredient a coumarin analog represented by the
general formula (1) below, a glycoside of that analog, or a plant extract
containing the coumarin analog or its glycoside:

(wherein R.sup.1 represents a hydrogen atom, a hydroxyl group or a methoxy
group, R.sup.2 represents a hydrogen atom or a hydroxyl group, and R.sup.1
and R.sup.2 are not both hydrogen atoms). The deterioration preventive
agent according to the present invention demonstrates superior
deterioration preventive effects for milk-containing foods. In addition,
the deterioration preventive agent provided by the present invention is
friendly to the environment and people.
Se divulgan un agente preventivo de la deterioración para los alimentos con leche que contienen como su ingrediente activo que un análogo del coumarin representó por el fórmula general (1) abajo, un glucósido de ése análogo, o un extracto de la planta que contiene el coumarin análogo o su glucósido: ## del ## STR1 (en donde R.sup.1 representa a un átomo del hidrógeno, a un grupo del oxhidrilo o a grupo methoxy, R.sup.2 representa un átomo del hidrógeno o un grupo del oxhidrilo, y R.sup.1 y R.sup.2 no son ambos átomos del hidrógeno). El agente preventivo de la deterioración según la actual invención demuestra los efectos preventivos de la deterioración superior para los alimentos con leche. Además, el agente preventivo de la deterioración proporcionado por la actual invención es amistoso al ambiente y a la gente.
