The invention relates a process of oxidizing starch wherein a root or tuber starch comprising at least 95 wt. % based on dry substance of the starch amylopectin, or a derivative therof, is treated with hydrogen peroxide in the presence of a catalyst, which catalyst comprises divalent copper ions. The present invention further relates to an oxidizable starch obtainable by a process comprising treating a starch with hydrogen peroxide in the presence of a catalyst, which catalyst comprises divalent copper ions.

La invención relaciona un proceso de oxidar el almidón en donde un almidón de la raíz o del tubérculo que abarca en menos 95 pesos % basados en la sustancia seca del amylopectin del almidón, o un therof derivado, se trata con el peróxido de hidrógeno en la presencia de un catalizador, que el catalizador abarca los iones de cobre bivalentes. La actual invención más futura se relaciona con un almidón oxidizable obtenible por un proceso que abarca tratando un almidón con el peróxido de hidrógeno en la presencia de un catalizador, que el catalizador abarca los iones de cobre bivalentes.
