Oxidation of starch

   
   

The invention relates to a process for the oxidation of starch, wherein a root or tuber starch comprising at least 95 wt. % of amylopectin, based on dry substance of the starch, is treated with an oxidizing agent and the resulting product is subjected to an alkaline treatment, said treatment comprising keeping the product for at least 15 minutes at a temperature of 20-50.degree. C. and a pH higher than 10. The invention further relates to an oxidized starch obtainable by said process and to various applications of said oxidized starch.

L'invention concerne un processus pour l'oxydation de l'amidon, où un amidon de racine ou de tubercule comportant au moins 95 poids % de l'amylopectine, basés sur la substance sèche de l'amidon, est préparé avec un oxydant et le produit résultant est soumis à un traitement alkalin, ledit traitement comportant gardant le produit pendant au moins 15 minutes à une température de 20-50.degree. C. et un pH plus haut que 10. L'invention autre se relie à un amidon oxydé procurable par ledit processus et à de diverses applications de ledit amidon oxydé.
