A liquid beverage concentrate having low viscosity, low water activity,
and extended shelf life at ambient temperatures. The liquid beverage
concentrate contains a sugar alcohol, a sweetener, a non-dairy creamer, a
stabilizing gum, and water. It can optionally contain one or more
flavorings, acidulants, colorings, preservatives, and emulsifying agents.
The liquid beverage concentrate enables relatively high ratios of
finished beverage to concentrate while remaining of sufficiently low
viscosity to allow the use of conventional beverage pumps and dispensers.
