A processed cheese consisting of natural cheese and/or casein/caseinate, water, additives, optionally butter and/or butter fat, further comprising crosslinked caseinate as a structure-providing ingredient. Furthermore the invention comprises a method for preparing a processed cheese, by mixing natural cheese and/or casein/caseinate, water, additives, optionally butter and/or butter fat, while adding crosslinked caseinate as a structure-providing ingredient.

Un fromage traité se composant du fromage normal et/ou casein/caseinate, l'eau, additifs, beurrent sur option et/ou des matières grass, comportant en outre le caséinate réticulé comme ingrédient structure-fournissant. En outre l'invention comporte une méthode pour préparer un fromage traité, en mélangeant le fromage normal et/ou casein/caseinate, l'eau, additifs, beurre sur option et/ou matière grasse, tout en ajoutant le caséinate réticulé comme ingrédient structure-fournissant.
