The present invention provides a water-in-oil type emulsified fat and/or
oil composition of which emulsification is stable in spite of containing a
high content of water and which is excellent during storage in physical
properties and feeling on eating. That is, the present invention provides
a water-in-oil type emulsified oil and/or fat composition which is
composed of (1) the oil phase comprising 35 to 95% by weight based on the
total oils and fats, of a diglyceride(s) having its increasing melting
point of lower than 20.degree. C. and the balance of triglycerides having
fatty acid parts comprising 13 to 60% by weight of palmitic acid and 5% by
weight or less of fatty acids having 12 or less carbon atoms, polymorph of
the triglycerides being stable in the form of .beta.' and (2) the aqueous
phase based on water.
Trotz des Enthaltens eines hohen Inhalts des Wassers, die anwesende Erfindung liefert eine Wasser-in-Öl Art emulgierter Fett und/oder Ölaufbau, von dem Emulgierung beständig ist und von dem während der Ablage in den physikalischen Eigenschaften und des Gefühls auf dem Essen ausgezeichnet ist. Das heißt, liefert die anwesende Erfindung eine Wasser-in-Öl Art emulgiertes Öl und/oder fetten Aufbau, der aus (1) der Ölphase besteht, die 35 bis 95% nach Gewicht basiert auf den Gesamtölen und den Fetten enthält, von einem diglyceride(s), das seinen zunehmenden Schmelzpunkt von niedrigerem als 20.degree hat. C. und die Balance der Triglyzeride, die Fettsäureteile haben, 13 bis 60% nach Gewicht Palmitinsäure und 5% nach Gewicht oder kleiner zu enthalten von den Fettsäuren haben 12 oder weniger Kohlenstoffatome, polymorphen Körper der Triglyzeride, die sind beständig in Form von beta.' und (2) die wäßrige Phase basiert auf Wasser.
