The invention provides an acidic oil-in-water type emulsion composition which has an oil phase containing at least 20 % by weight of diacylglycerol and 0.5 to 5.0 % by weight of a crystallization inhibitor, and has excellent shelf stability at low temperatures though it contains diacylglycerol at a high concentration, also good in appearance and flavor and useful as a diet or food for improving lipid metabolism.

L'invention fournit un type huile/eau acide composition en émulsion qui a une phase d'huile contenir au moins 20 % en poids du diacylglycerol et 0.5 à 5.0 % du poids d'un inhibiteur de cristallisation, et a l'excellente stabilité d'étagère à de basses températures bien qu'elle contienne le diacylglycerol à une concentration élevée, aussi bonne dans l'aspect et la saveur et utile comme régime ou aliment pour améliorer le métabolisme de lipide.
