The present invention provides a process for the preparation of protein hydrolysate from milk protein by treating milk protein with fungal protease at a pH of 7.5-8.5, a temperature of 40.+-.5.degree. C. for a time period of 30 min to 2 hours, followed by heating at 65-70.degree. C. for at least 3 min, separating the clarified supernatant by a known manner and drying the clarified liquor thus obtained to get the protein hydrolysate.

La actual invención proporciona un proceso para la preparación del hydrolysate de la proteína de la proteína de leche tratando la proteína de leche con el protease fungicida en un pH de 7.5-8.5, una temperatura de 40.+-.5.degree. C. por un período de 30 minutos a 2 horas, seguido calentando en 65-70.degree. C. por por lo menos 3 minutos, separando el supernatant clarificado por una manera y una sequedad sabidas el licor clarificado obtenido así para conseguir el hydrolysate de la proteína.
