The hydroxybenzoate compounds of this invention are defined by the formula: ##STR1## wherein Y is hydrogen, hydroxy, halo, a C.sub.1 to C.sub.6 alkyl or a C.sub.2 to C.sub.6 alkyl ether; R is a C.sub.4 to C.sub.6 mono- or di-olefinically unsaturated hydrocarbon radical, a C.sub.4 to C.sub.7 mono- or di-acetylenically unsaturated hydrocarbon radical or a C.sub.2 to C.sub.3 acetylenically unsaturated hydrocarbon radical when at least one of X and Y is other than hydrogen and X is hydrogen, hydroxy, halo, a C.sub.1 to C.sub.6 alkyl, a C.sub.2 to C.sub.6 alkyl ether or ##STR2## in which A is selected from the group of X, B is selected from the group of Y and R.sub.1 is hydrogen, hydroxy, C.sub.1 to C.sub.6 alkyl, C.sub.1 to C.sub.6 alkoxy or --COOR.sub.2 in which R.sub.2 is C.sub.1 to C.sub.6 alkyl, a C.sub.2 to C.sub.6 olefinically unsaturated hydrocarbon radical or a C.sub.2 to C.sub.7 acetylenically unsaturated hydrocarbon radical. The invention also pertains to food, beverage, cosmetic, agrichemical and topically applied pharmaceutical compositions containing an effective preservative amount of the hydroxy aliphatically unsaturated benzoate having the formula: ##STR3## wherein X' is selected from the group of X; Y' is selected from the group of Y and R.sub.4 is a C.sub.2 to C.sub.6 mono- or di-olefinically unsaturated hydrocarbon radical or a C.sub.2 to C.sub.7 mono- or di-acetylenically unsaturated hydrocarbon radical.

Los compuestos del hydroxybenzoate de esta invención son definidos por el fórmula: ## del ## STR1 en donde Y es hidrógeno, hydroxy, halo, un C.sub.1 a C.sub.6 alkyl o un C.sub.2 al éter del alkyl C.sub.6; R es un C.sub.4 a C.sub.6 el radical no saturado mono o de hidrocarburo de los di-olefinically-olefinically, un C.sub.4 a C.sub.7 radical no saturado mono o de hidrocarburo de los di-acetylenically-acetylenically o un C.sub.2 al radical de hidrocarburo acetylenically no saturado C.sub.3 cuando por lo menos uno de X y de Y está con excepción de hidrógeno y X es el hidrógeno, hydroxy, el halo, un C.sub.1 al alkyl C.sub.6, un C.sub.2 al éter alkyl C.sub.6 o el ## en los cuales A se selecciona del grupo de X, B del ## STR2 se selecciona del grupo de Y y R.sub.1 es hidrógeno, hydroxy, C.sub.1 al alkyl C.sub.6, C.sub.1 a C.sub.6 alkoxy o -- COOR.sub.2 en el cual R.sub.2 sea C.sub.1 al alkyl C.sub.6, un C.sub.2 a C.sub.6 olefinically radical de hidrocarburo no saturado o un C.sub.2 al radical de hidrocarburo acetylenically no saturado C.sub.7. La invención también pertenece a las composiciones farmacéuticas del alimento, de la bebida, del cosmético, agrichemical y tópico aplicadas que contienen una cantidad preservativa eficaz del benzoato alifáticamente no saturado hydroxy que tiene el fórmula: ## del ## STR3 en donde X' se selecciona del grupo de X; Y ' se selecciona del grupo de Y y R.sub.4 es un C.sub.2 a C.sub.6 radical no saturado mono o de hidrocarburo de los di-olefinically-olefinically o un C.sub.2 a C.sub.7 radical no saturado mono o de hidrocarburo de los di-acetylenically-acetylenically.
