The electromagnetic field includes electric and magnetic components which combine, both involving a food product, also a large-size one, to heat at a uniform temperature the entire mass of the food product (P) itself. The application system includes a first application device (12) connected with the generator of oscillating voltage and having the shape of a tunnel.
