In the disclosed process for making chocolate, only part of the chocolate mass raw materials is mixed, roller refined and conched. This part contains the cocoa liquor and part of the cocoa butter, possibly part of the emulsifier and, when milk chocolate is to be prepared, also the ingredients derived from milk. The conched portion of the chocolate mass raw materials as a percentage of the total ingredients of the chocolate mass is about 30-60%, preferably 40-55%. Separate from said first part, another part of the raw materials, i.e. the sweetener or the major part thereof, part of the cocoa butter, the possible flavourings, and a small quantity of an emulsifier, is mixed and roller refined. This latter part is not conched. This roller-refined part of the mass is mixed with the conched part of the mass together with the remainder of the cocoa butter and emulsifier and the possible intense sweetener.

Nel procedimento rilevato per fare il cioccolato, soltanto la parte delle materie prime della massa del cioccolato è mescolata, il rullo è raffinato e conched. Questa parte contiene il liquore del cacao e la parte del burro di cacao, possibilmente parte dell'emulsionante e, quando il cioccolato al latte deve essere preparato, inoltre degli ingredienti derivati da latte. Conched la parte delle materie prime della massa del cioccolato poichè una percentuale degli ingredienti totali della massa del cioccolato è circa 30-60%, preferibilmente 40-55%. A parte dalla prima parte detta, un'altra parte delle materie prime, cioè il dolcificante o la parte principale di ciò facente parte il burro di cacao, i condimenti possibili e una piccola quantità di un emulsionante, è mescolata ed il rullo è raffinato. Questa parte posteriore non è conched. Questa parte rullo-raffinata della massa è mescolata con conched la parte della massa insieme al resto del burro di cacao e l'emulsionante ed il dolcificante intenso possibile.
